After getting a taste of working in Bay Shore, the owners of Mattituck’s popular North Fork Doughnut Company want more.

Over the last year, the founders — husband-and-wife team Jimmy Lyons and Kelly Brigucci — worked closely with Bay Shore businesses, creating a Strawberry Frosted Doughnut Milkshake IPA with Destination Unknown Beer Company, and hosting a doughnut and cocktail pairing with Coastal Kitchen and Cocktails.

That synergy with the downtown led to the go-to bakeshop, known by many as NoFoDoCo, to pick the area for their second location.

“Kelly and I always had a goal… to align ourselves with businesses that are doing stuff the same way, vibe that we are doing it,” said Lyons on The 495 Podcast.

Lyons and Briguccia will be opening their second store at the newly renovated 1 East Main Street building, with the plans for an early 2020 opening.

“It has been extremely exciting and a huge learning experience,” Lyons told GreaterBayShore on the expansion.

NoFoDoCo was founded in June 2018 after the two lovebirds left their day jobs for this passion project.

“I always loved to cook; I have been in the beer world for a long time,” explained Lyons, who lives in Yaphank. “I always loved the science behind it, loved the cooking aspect of brewing, the craft, and culture.”

For Briguccia, baking has been a longtime family tradition.

“I grew up watching my mother cook,” she said.

After her mother passed away, she dedicated most of her time perfecting her mother’s creations, like her famed rainbow cookie doughnut.

Now, the two are using those family recipes, along with their own twists, in their own menu.

To create the handcrafted doughy treats, Lyons and Briguccia come to work at 3 a.m.—and 1:30 a.m. on holidays—for the baking process.
