North Fork Doughnut Company is days away from opening in downtown Bay Shore.
The popular doughnut shop, founded in Mattituck June 2018, will open its sister bakeshop on Saturday, Aug. 1.
Last summer, the founders — husband-and-wife team Jimmy Lyons and Kelly Brigucci — announced they were taking over space inside the new 1 East Main Street building in Bay Shore, after carefully searching across the island for their next location.
“There’s no shortage of awesome businesses out here in Bay Shore,” said Lyons.
Before opening, the two made a concerted effort to introduce themselves to the vibrant Main Street.
“We’ve always done collaborations,” said Lyons. “We are a big believer in working with other small and like-minded businesses.”
Their company, widely known as NoFoDoCo, already created a Strawberry Frosted Doughnut Milkshake IPA with Destination Unknown Beer Company and hosted a doughnut and cocktail pairing with Coastal Kitchen and Cocktails.
“We got a bunch more in the works too,” he added. “Pop-ups, more collabs; it’s going to be a lot of fun.”
During the grand opening, NoFoDoCo will open at 6 a.m. and run until they sell out of dough.
The doughnut eatery will then be open seven days a week. The couple has plans to add late-night hours, possibly operating to 3 a.m. on weekends, in the future.
To create these handcrafted doughy treats, Lyons and Briguccia come to work at 3 a.m.— and 1:30 a.m. on holidays — for the baking process.
